No Bake Peanut Butter Cup Pie

Okay, so those of you that know me, know that I LOVE to make EASY foods lol. Most of my clean eating recipes come from Dashing Dish, Inc. including this one!


I tried this recipe for the first time and it was AMAZING! I basically ate the whole thing in about 2 days (Don't judge me lol).


DD Recipe Story "This No Bake Peanut Butter Cup Pie is creamy, rich, delicious, and incredibly easy to make! The best part about this pie (other than the fact that it tastes like a giant peanut butter cup), is that it only requires a few simple gluten free and clean eating ingredients, and you never have to heat up the oven; Making it the perfect treat for spring and summer!"

Ingredients

  • 1 cupsGreek yogurt [1]

  • 1 1/2 cupsPeanut flour [2]

  • 1/4 cupsCocoa powder

  • 3/4 cupsSweetener of choice

  • 1/4 tspSalt

  • 1/2 cupsAlmond milk

  • 2 (8oz)Tru Whip

  • 1 (9-inch)Chocolate pie crust [3]

Method

  1. **For the crust:** If using store-bought crust, reform the pie crust into a pie pan by popping it out of the tin pan and pressing it firmly into pie pan using the back of a measuring cup. (This step is certainly optional, but makes for a prettier pie in my opinion). If using homemade, follow recipe instructions.

  2. **To making the filling:** Use a hand held (or counter top) mixer to whisk Greek yogurt, peanut flour, sweetener, salt, and milk together in a medium-sized bowl until it becomes creamy.

  3. Fold one of the 8-ounce containers of Tru whip into the topping mixture gently. Save the other for serving. Pour pie filling onto the chocolate pie crust.

  4. Place pie in the refrigerator for at least 4 hours or overnight.

  5. Just before serving, top with the remaining Tru Whip. Top with toppings if desired.

  6. Keep refrigerated for up to seven days.

[1]Or 8 oz pkg reduced fat cream cheese, softened.

[2]Or you could use 1 cup creamy nut butter of choice.

Important: If using nut butter instead of peanut flour, only use 1/4 cup milk for this recipe.

[3]I used store-bought, but you could also use a homemade crust using Annies organic chocolate bunnies or cookies of choice.
